Of course I did not call it mac and cheese, I referred to it as pasta with bacon and cheese!

Transfer dish to a wire rack to cool for 5 minutes. Drain the macaroni and return to the pot. If adding vegetables, cook/heat through as desired. Check at 15 minutes to make sure the breadcrumbs aren't browning too quickly (if they are, just place a sheet of foil loosely over the top). Cook 8 ounces gluten-free elbow macaroni according to the package in a large pot. Bake until browned on top, about 30 minutes. Scatter herbed breadcrumbs over the top.ĥ. Meanwhile, cook gluten free noodles in a large stockpot until just a little more than al dente. Spoon out oil from pan, reserving about 1 Tablespoon of bacon drippings. Add Italian style gluten free bread crumbs and parmesan cheese. In a large skillet, sauté bacon until it is almost crisp. Remove breadcrumbs to a bowl and set aside.ģ. Remove from heat and stir through the vegetable purée, you should now have a smooth cheese sauce, loaded with hidden veggies.

At this point you should have quite a thick but smooth sauce (photo 5) Stir through the grated cheese until melted. Add bread pieces and pulse until bread turns into crumbs and mixture is combined. Bring the sauce just to the boil then reduce the heat. Prepare breadcrumbs: Place garlic and parsley in the bowl of a food processor fitted with the steel blade and pulse until they’re minced.
